Paul’s Plant Based Hot Chocolate

Happy Monday!

The oh so cooling orange juice I crave on a hot day ain’t cutting it now it’s getting chiller. I find myself gravitating to warmer drinks which is only natural as the temps start to dip. Nothing says it’s cold outside like cup of hot chocolate. Yes, hot chocolate season’s* in full swing and I have P’s delicious yummy plant based hot chocolate recipe to share with you!OLYMPUS DIGITAL CAMERA

*Southern Hemisphere lucky b*ggers are beginning summer. Bet a cold orange juice sounds temping right about now.

When I made the switch from vegetarian to vegan, I gave up my Aero instant hot chocolate and I’ve missed hot chocolate. When it’s cold out a cup of tea doesn’t always cut it. Aside from cups of Darjeeling, peppermint and Sencha green tea I’m happy hot chocolate’s back in my life now it’s colder! Partly due to laziness of not wanting to make my own and that most plant milk doesn’t give the same body as cows milk does I haven’t made my own. However P’s shown with the oat milk you get the body of cow’s milk and it’s easy to make!

I mentioned in a few weeks ago we went out for a bike ride and Starbucks hot chocolate for a treat. The hot chocolate didn’t happen as the chocolate powder has cows milk in. I Googled before going if it’s vegan as I remember a barista once telling me the powder has cows milk in. Google said yes, it’s vegan, the Starbucks barista said no, the powder has cow’s milk when we asked for soya milk. Long story short P dived into his chef brain, tweaked a recipe and made a yummy Starbucks worthy hot chocolate. Now I’m fending for myself again for a while he kindly shared didn’t have a option not to share it with me:

Hot Chocolate for 1:

Ingredients

1 mug (doh!)

Oat milk. Plain or chocolate. At the moment it’s Oatly.

Organic cocoa powder/ drinking chocolate (no sneaky dairy lactose in). Organic Fair Trade even better.

Vanilla essence

Directions

Mix 2-3 level tablespoons of cocoa powder or drinking chocolate powder depending on taste mixed with a little milk into a paste (he say’s 3, I prefer 2).

If using chocolate flavoured milk, 2 level tablespoons.

Microwave for 30 seconds

Stir in more milk until desired level

Microwave for 2-3 minutes watching it doesn’t over flow as it’ll spoil the taste. I managed to do this on the first cup. Way too bitter!

Stir a few generous drops of vanilla essence.

What’s your favourite hot drink when it’s cold outside?
